Easy Caprese Bruschetta

This Caprese Bruchetta is a delicious twist on the famous Caprese salad. A crusty bread topped with fresh tomatoes, olives, mozzarella, basil and spices, is the perfect bite every time. Serve it as an appetizer, a side dish, or whenever you have an abundance of fresh tomatoes!

Bruschetta is an Italian antipasto, made of crusty grilled bread rubbed with garlic and simply drizzled with olive oil and salt. Anti (before) Pasto (meal) is typically served before a meal which in English is called an appetizer!

Tomato and mozzarella bruschetta is just one of the many variations and flavour combinations possible. If you have ever eaten a Caprese salad you know what a burst of flavour you are in for!

If you have recently visited your local farmer’s market or grocery store and picked up some ripe tomatoes or have been lucky enough to grow your own Caprese bruschetta is a delicious and easy way to use them up.

I hope you picked up lots of fresh mozzarella, Italian olive oil and delicious basil while you were at it, because this quick and easy appetizer or snack is something you will be making more than once, I promise!

How to make Caprese Bruschetta

Combine the chopped tomatoes, sliced olives, oregano, chopped basil leaves, salt, and oil in a bowl and mix to combine.

Rub the grilled bread slices with garlic, then top each with a slice of fresh mozzarella and divide the topping equally between each slice of bruschetta.

Serve immediately so they don’t get soggy!

Can I use a balsamic glaze?

You may have eaten a Caprese salad drizzled with a glaze or perhaps have seen versions of this Caprese bruschetta that uses it so yes, you definitely can add it.

It will, however, give you a different flavour profile with a hint of extra acid and sweetness. If that is something you would like to do, go for it. If you prefer not to have it, you definitely do not need it!

What other toppings can I put on bruschetta?

The simple classic is always delicious. Crostini bread topped with a garlic rub and juicy ripe tomatoes. If you are looking for something totally different why not try thinly sliced cold cuts, pesto or garlic white beans.

How to store bruschetta

Once assembled you will want to eat it right away as there is a tendency for the bread to get soggy the longer the tomatoes are sitting on it.

If you have leftover Caprese topping you would like to use again, keep it in an airtight container in the fridge for up to 3 days and eat is as is as a delicious salad!

Ingredients
  

  • 6 slices Italian bread (grilled or toasted)
  • 1-2 cloves garlic
  • 6 slices fresh mozzarella cheese
  • 10-12 grape or cherry tomatoes chopped
  • 6-8 black olives slices
  • 1/2-3/4 teaspoon oregano
  • 4-5 fresh basil leaves (chopped)
  • 1/4 teaspoon salt (or to taste)
  • 3-4 tablespoons olive oil

Instructions
 

  • In a medium to large bowl combine the chopped tomatoes, sliced olives, oregano, chopped basil leaves, salt and oil, mix gently to combine.
  • Rub the grilled bread slices with garlic, then top each with a slice of fresh mozzarella and divide the topping equally between each slice of bruschetta. Serve immediately. Enjoy!

Bruschetta is perfect for using up day old crusty bread, no need to toss it, just make bruschetta!
