Keeping in mind that you want to stay away from creamy cheeses or cheeses that are too hard, but anything in between, preferably a medium-hard cheese, works best.

How to make refrigerator dough cheese bread
Remove the refrigerator dough from the fridge and sprinkle the top of the dough with a little flour. Remove some of the dough leaving the remaining in the fridge. Quickly form into a round loaf and cover with a towel to let it rest.
Once rested, place dough on a lightly floured surface and flatten with the palm of your hand into a rectangle shape. Fold the dough like an envelope, adding the cheese in between folds.
Form the dough into a ball and place the loaf on a parchment-lined board. Cover with plastic wrap and let rise in a warm area.
Once done rising, score the bread and top with remaining cheese.
Prior to preheating your oven, place an oven-safe cake pan on the bottom and a cookie sheet, a pizza stone or a dutch oven on the middle rack. If you are using a dutch oven you do not need a cake pan on the bottom rack. Then preheat your oven.
Add a cup of very hot/boiling water OR ice cubes to the cake pan. Ironic that both ice cubes and boiling water have the same effect! Immediately after, place the dough onto the cookie sheet/pizza stone or if you are using a dutch oven, place dough inside and close lid.
The dutch oven creates its own steam which is why you won't need to add the cake pan with water or ice. The steam created is what gives the bread that lovely rustic crusty exterior. Bake until done and remove immediately to a wire rack to cool.

Dutch ovens, sometimes called French ovens are essentially pots with thick walls. Usually made of cast iron, aluminum or ceramic, they have been used for centuries. They are mini ovens! So really anything you can make in an average oven, you can make in a dutch oven. People use them for low and slow cooking, simmering stews and of course baking bread!

Refrigerator Dough Cheese Bread Recipe
- 1 pound refrigerator dough (453 grams)
- 1 cup cheese (swiss or cheddar)* divided (100 grams)
*You can use your favourite cheese, be sure the cheese is on the medium hard side, anything but a creamy cheese or a really hard cheese.
- Remove the Refrigerator Dough from the fridge, sprinkle the top of the dough with a little flour (1-2 tablespoons) and remove 1 pound (453 grams). Remaining dough cover the bowl and place in the fridge.
- Quickly form the dough into a round loaf. Cover with a towel and let rest 20 minutes, then place the dough on a lightly floured flat surface and with the palm of your hand lightly flatten into a small rectangle, fold the dough like an envelope adding cheese (3/4 cup) in between folds (see photos) Form the dough into a ball, place the loaf on a parchment paper lined board, cover with plastic wrap and let rise in a warm draft free area for approximately 2 hours. After the time has passed score the bread and top with the remaining cheese.
- Before Pre-heating the oven to 425F (220C), place an oven safe cake pan on the bottom of the oven, and a cookie sheet upside down, a pizza stone or even a dutch oven with lid* on the rack in the middle of the oven, then pre-heat.
- Add a cup of very hot (or even boiling water) or 8-10 ice cubes in the cake pan on the bottom of the oven before adding the dough, then quickly place the risen dough and parchment paper on the cookie sheet, pizza stone or in the dutch oven (with lid). Bake for approximately 30 minutes. If using the dutch oven, then after 20 minutes remove the lid and continue to bake for another 10-15 minutes.
- Immediately move the bread to a wire rack to cool before serving.
