Stove Top Skillet Pan Pizza

No need to heat the oven with this delicious Stove Top Skillet Pan Pizza. An easy homemade pizza dough topped with your favourite toppings and mozzarella cheese. You will wonder why you didn’t try it sooner!

If there’s one thing we can’t live without it’s Pizza night! Which can actually mean any day of the week. But with the heatwave that is sweeping Italy these days, the last thing I want to do is turn on the oven. So why not bake it on the stove top? And yes it works perfectly.

I used this easy to make Pizza Dough for this recipe, or you could try this very popular Dough Recipe. Although if you want it fast and you want it now, then a good store bought would work too.

How to make it

In the stand up mixer add the water and sprinkle with the yeast, let sit for 5 – 10 minutes, then stir. Start the mixer and add half the flour, knead with the dough hook. Add the remaining flour and salt.  Continue to knead for about 8-10 minutes.

Move the dough to a lightly floured flat surface and knead a few times into a smooth ball. Place the dough in a lightly oiled bowl. Cover  and let rise for an hour in a warm draft free room.

Remove the dough from the bowl and knead it or punch it down a few times. Divide the dough into two parts or leave one if making a large pizza. Cover again and let rise for an hour.

Again knead the dough a couple of times, then place on a lightly greased skillet/pan and let rest for about 15 minutes. With your hands shape the dough to fill the pan.

Place the pan on low heat, cover and cook for about 10 minutes or until golden brown on the bottom. Flip the dough over and spread the topping on the top.

Cover and cook on low heat for about 10 minutes, uncover and sprinkle with shredded mozzarella. Cover again and cook until the cheese has melted. 

What is Pan Pizza

Pan pizza can be a thin or thick crust pizza which is baked in a deep dish pan. The crust will become crispy because of the oil in the pan. It is usually baked in the oven, but this stove top version is also very good.

Why does the water have to be lukewarm?

You need a lukewarm liquid (which is usually water or milk) to activate the yeast. It is very important that the temperature is correct, usually around 105F (40C), cold water won’t get the yeast activated, and hot water will kill it .

Why does the dough have to rest?

If you have ever tried to shape your dough just after the final rise, you will notice that once you stretch it out, tit will then snap back. Letting it rest will loosen the dough up and make it easier to shape.

Can I use bread flour?

For pizza dough you can use either all purpose or bread flour. Bread flour will give you a chewier denser crust if that is what you prefer.

What can I substitute for active dry yeast?

If you don’t have any active dry yeast than you can substitute for either instant yeast or even fresh yeast.  One teaspoon of active dry yeast is equal to 3/4 teaspoon of instant or 5.3 grams of fresh/cake yeast.

What kind of toppings can I use

You can top the pizza with any of your preferred topping, if you like a white pizza then a drizzle of olive oil, fresh rosemary and rock salt would be the a good idea. Or even just fresh tomatoes, or even your favourite tomato sauce with sliced pepperoni, or why not go vegetarian? The choices are endless.

Ingredients
  

FOR THE PIZZA DOUGH

  • 3/4 cup + 2 1/2 tablespoons lukewarm water (105F/40F) divided (213 grams)
  • 2 1/2 cups all purpose or bread flour (325 grams)
  • 1 teaspoon active dry yeast
  • 3/4 teaspoon salt

FOR THE TOPPING

  • 2 tablespoons olive oil
  • 1 clove garlic minced
  • 2 cups chopped or sliced mushrooms (150 grams)
  • 1/2 medium onion chopped
  • 13 grape or cherry tomatoes halved
  • 2 Italian sausages (casing removed and chopped)
  • 1/2-3/4 teaspoon oregano
  • 1/2 teaspoon basil (or fresh basil leaves)
  • 1-2 pinches hot pepper flakes
  • 1 cup mozzarella cheese shredded (more if desired) (225 grams)

Instructions
 

FOR THE PIZZA DOUGH

  • In the stand up mixer add 3/4 cup + 1 tablespoon lukewarm water and sprinkle with the yeast, let sit for 5 minutes. Start the mixer and add half the flour, knead with the dough hook. Add the remaining flour and salt. Continue to knead, if too dry then add the remaining 1 1/2 tablespoons of water, continue to knead for 8-10 minutes.
  • Move the dough to a lightly floured flat surface and knead a few times into a smooth ball. Place the dough in a lightly oiled bowl, rolling it to lightly cover the top with the oil. Cover the bowl with a clean tea towel or plastic wrap and let rise for an hour in a warm draft free room. Remove the dough from the bowl punch it down a few times. Divide the dough into 2 parts or leave one if making a thick crust pizza*. Cover again and let rise for an hour. Again knead the dough a couple of times, then place on the lightly greased pan/skillet and let rest for 15 – 20 minutes.
  • With your hands shape the dough to fill the pan. Place the pan on low heat, cover and cook for about 10-15 minutes or until golden brown on the bottom. Flip the dough over and spread the topping on the top. Cover and cook on low heat for about 10 minutes, uncover and sprinkle with shredded mozzarella. Cover again and cook for another 5 minutes or until the cheese has melted. Check to make sure the bottom of the pizza has browned. Serve immediately.

*I made one thick crust pizza using an 11 inch (28 cm) pan.

    FOR THE TOPPING

    • In a medium frying pan add the olive oil, garlic, chopped mushroom, onion, tomatoes, chopped sausage and spices. Cook until tender.
