This Caprese Bruchetta is a delicious twist on the famous Caprese salad. A crusty bread topped with fresh tomatoes, olives, mozzarella, basil & spices, is the perfect bite every time.
In a medium to large bowl combine the chopped tomatoes, sliced olives, oregano, chopped basil leaves, salt and oil, mix gently to combine.
Rub the grilled bread slices with garlic, then top each with a slice of fresh mozzarella and divide the topping equally between each slice of bruschetta. Serve immediately. Enjoy!
